Fresh, powdery grist, some must, and hints of fruity esters in the nose. Near medium in body, relatively smooth on the palate, but a scrubbing carbonation breaks things up. Crisp, for a moment. Raw leafy hop tannic feel on the palate segues to a thin, watery, citric-like bitterness. Mineral flavors come to play. Malt flavors seem a bit masked at first, but there's a malt presence that provides some backing for everything else, with some apple-y fruitiness beneath. That said, as the beer warms a round and sweet caramel and toasty malty note emerges, along with some earthy and woody suggestions, but alas it's towards the end of the beer. Finishes dry with a mineral linger and sweet edges. Pours a clear, golden and rich brew, with a light tint of blush and topped with a creamy lacing. Soft aroma of raspberries, suggestions of something tart and a faint caramel on the nose. Quite smooth on the palate, firm, with a medium-body and moderate crispness. Malty base is just a tad sweet, with fresh pale malt and wheat flavors. A raspberry flavor rides in on off of the crispness and builds to a nice tart smack with salt and lime-like characters. Bitter, near puckering. The malts back things up just enough, too. Wheaty in the linger, which dries up nicely for a relatively clean finish. Belgian style double IPA with Brettanomyces. this ale is aged in french oak chardonnay barrels. Brewed with Apollo, Citra, and Simcoe hops. Dry hopped in the barrel with Citra hops. Triple fermented- First in the tank with a Belgian yeast, second in french oak chardonnay barrels with brett, and finally in the bottle with a third yeast for natural carbonation. Loads of complex roasted and smoked aromas, pear, grain and husk beneath. Smooth and creamy on the palate. Medium body, with a nice malty base. Light fruity grape flavors add some nice balance to accented smokiness. Pear-like flavors and feel. Bitterness is balanced and allows the Weyermann rauch and chocolate wheat malts to flex. Nice hints of chocolate smooth things together quite nic ely. A raw leafy character leaves a tannin feel on the palate, along with some smoky husks. Slightly dry finish with smoky lingers.
